- 1/2 cup olive oil
- 1/3 cup lime juice
- 2 teaspoons chipotle chili powder
- 2 teaspoons chopped garlic
- 1 teaspoon cumin
- 4 cups cooked chicken, diced
- 1 red bell pepper, chopped
- 3/4 cup chopped onion
- 3/4 cup cilantro, chopped
- 1 tablespoon chopped jalapeno
- 4 cups romaine lettuce or large leafed lettuce
Whisk first 5 ingredients to blend; mix in chicken, bell pepper, onion, cilantro, and jalapeno. Season with salt and pepper to taste. Wrap chicken in lettuce leaves and use honey-mustard soy dressing to dip.
Dressing:
- 1/4 cup honey
- 2 T mustard
- 4 T soy sauce
- toasted sesame seeds
Whisk or shake together until well-blended.
